Hot Spinach Salad

with Goat Cheese

Servings: 4                                                      

 

1/2 lb. spinach

2 oz. red onions, sliced very thin

1/4 cup red onions, chopped fine

1 teaspoon garlic. minced

3/4 cup balsamic vinegar

2 tablespoons red wine vinegar

1 1/2 tablespoons sugar

1/4 cup olive oil

1 whole Polish sausage, quartered and sliced thin

salt & pepper

4 tablespoons goat cheese

Remove stems from spinach and rinse in cold water.

Dry spinach well and keep in refrigerator, while making the dressing.

Heat a skillet and add 1 tablespoon of olive oil.

Add sliced sausage and saute the sausage until it starts to get brown.

Add the chopped onions and saute some more. Add the garlic and saute

for 2 minutes.

Add the rest of the ingredients except sliced onions.

Season with salt and pepper and reduce the dressing by one third.

Toss the spinach in a large bowl well with the sliced onions and the dressing.

Split up the salad in four cold bowls and top with goat cheese.

Offer extra fresh ground pepper.
